Healthy Recipe: Cauliflower Parmesan

I've been on a weight loss journey with the help of Profile by Sanford since the end of September. I've eliminated sugar, most carbs, a lot of dairy from my diet. I eat a ton of vegetables, some protein and drink a lot of water. One of my fears going into my lifestyle change was not being able to have fun in the kitchen. I love a challenge and I love discovering new delicious ways to cook vegetables! I have come up with a number of delicious, filling and nourishing new recipes.

My new favorite is Cauliflower Parmesan. If you are following a keto-like diet, this is perfect.

Here is what you do...

Pre-heat oven to 450

Take a head of cauliflower and chop into large "steaks" by chopping length-wise with a big knife.

Brush olive oil (I add red pepper, salt and pepper to it) on each side of your cauliflower steak

Roast in the oven for 35 minutes. Turn half way through.

Take out of the oven after 35 minutes. Add marinara (I use Ragu's no sugar added), parmesan and mozzarella to each steak. Broil for about 3 minutes to melt cheese.

Add some Red Pepper and fresh basil before you serve. Delicioso and oh so nutritious!
