Super QUICK & EASY Hard Boiled Eggs [RECIPE INSIDE]

With Easter coming up, it's important to remember that EGGS are the focus of the holiday. (Yes, even more than just coloring them for your baskets!) & let's be honest here- why wouldn't they be? Eggs are DELICIOUS & HEALTHY! If you've heard my on-air spots, I've told you more than once that eggs are ONLY 70 calories with 6 grams of protein. (Trying to get your summer body right? grab an egg!) This is my choice for healthy meals, a quick snack, or just to upgrade a dessert (eggs in pie, hello!)

Check out my snack this week, I've made easy peel (seriously easy to peel) hard boiled eggs!

The Iowa Egg Council's EASY PEEL HARD BOILED EGGS

1.  HEAT 1/2- to 1-inch of water in a large saucepan to boiling over high heat.  Carefully place steamer insert into pan over boiling water OR proceed to Step 2, if   not using a steamer insert

2.  Carefully ADD eggs using a large spoon or tongs. COVER Continue cooking 12 minutes for large eggs (13 minutes for extra large eggs).

3.  DRAIN immediately and serve warm. OR, cool completely under cold running water or in bowl of ice water
