I made a pie!!! The Iowa Egg Council have all these great, easy to make, delicious recipes listed at Iowaegg.org and I found a delicious recipe for Bananas Foster Cream Cheese Pie! It tastes as good as it sounds! It's made with 6 eggs and only takes about 20 minutes to prepare and 45 minutes to cook.
Ingredients needed:
Graham cracker crust - you can use a prepared crust, but I made one from scratch.
You need a 9 inch pie pan
Mix 1 1/2 cups of graham cracker crumbs with
1/4 cup of sugar
Mix in 1/3 cup of room temperature butter (I melted it a bit more than room temperature)
Press mixture in the bottom and sides of pie pan
Bake for 10 minutes at 350 degrees.
While the pie crust is baking. . . in a pan on your stove top combine:
2 1/4 cups of sliced bananas
1/4 cup of sugar
2 tbl butter
after two minutes, add in
1 tsp of pumpkin pie spice
1 1/4 tablespoons of fresh squeezed lemon juice
cook for a couple minutes
When the pie crust is cook add the banana layer in the pie crust
In a separate mixing bowl beat on high
2 8oz packages of room temperature cream cheese
6 delicious eggs
1 cup of sugar
1 1/2 tbl lemon juice
1 tsp vanilla
After all is blended, gently add in 1/3 cup of flour
Pour over banana layer
Bake at 350 for 40 - 45 minutes
Cool completely, then put in fridge overnight to set
The next day, garnish with whipped cream, bananas and carmel sauce
