Avocado-Licious Deviled Eggs


May is Egg Month and we're celebrating with the Iowa Egg Council!!!! They have delicious and eggggciting recipes on their website at Iowaegg.org. Eggs are delicious and nutritious with zero grams of sugar and carbs in each egg. Plus, the lutein in eggs is really good for our eyes and combatting all the blue light we receive from our devices!!!

The recipe that really caught my eye is Avocado-licious Deviled Eggs!!! They are amazingly delicious and would be perfect for your next backyard BBQ or party!!!

.... and they are really easy to make.

You need a dozen hard boiled eggs. Check out my video for making hardboiled eggs in the oven.

1 avocado

2 teaspoons of lime juice

1/2 cup of mayonaise

1 tablespoon of dijon mustard

1/4 teaspoon of salt

1 teaspoon of sweet or dill pickle juice (I recommend Brine Brothers Chili Cherry Fire Pickle Juice)

a few drops of tabasco sauce

Spanish Paprika

Cut the hardboiled eggs cross wise.

Put the yolks in a Ziploc bag.

Add mayo, mustard, salt, pickle juice and tabasco sauce in the bag. Mix it together by squeezing the outside of the bag.

Cut the avocado in 24 pieces and put in a small bowl. Add in the fresh lime juice.

Cut a corner of the ziploc bag so that the mixture can be squeezed out.

Squeeze the yolk mixture into the egg whites. Add one piece of avocado on top of each egg. Sprinkle with paprika.
